The Hellers Street Eats range (all gluten free!) are so good for a very quick and easy meal. I made nachos from their slow cooked Mexican chicken. I have also made yum sliders with their Korean BBQ pulled pork 👌

Poached chicken … I had completely forgot about this super easy cooking method to ensure you get nice juicy, tender chicken breast! I made this the other night for dinner and served it with some kumara mash and steamed bok choy. I combined some of the left over poaching broth with cooking cream for the sauce 👩🍳 I’ll put how I poached the chicken in the comments ⬇️

I made some sushi rolls today for the kids afternoon tea and had leftovers so made myself a sushi bowl for lunch. I love that Kikkoman’s thick teriyaki sauce is gluten free it’s the perfect sauce to squiggle over the top!

Gluten free corn fritters that even muggles will love! By using just a few tablespoons of both cornflour and gf flour you get a lovely light batter, here’s my recipe 🌽 ⬇️
Gluten Free Kiwi Girl’s Corn & Courgette Fritters
Makes 8 fritters
Ingredients
* 2 tins (820g) corn kernels (drained)
* 1 courgette, grated (squeeze out water)
* 2 large eggs
* 3 tablespoons gluten free flour
* 3 tablespoons cornflour
* 1/4 red onion, diced
* 1/2 cup spring onions, sliced
* 1 teaspoon baking powder
* ½ teaspoon salt
* ¼ teaspoon black pepper
* 1 tablespoon oil for frying
Method
* Turn on the oven to 100 degrees Celsius this is just to keep all the fritters warm.
* Crack the eggs into a bowl and whisk in the gluten free flour and cornflour until no lumps are left.
* Add all the other ingredients and stir.
* Heat up a frying pan and add the oil and cook in batches over a medium heat.
* Add the fritters to a baking dish lined with paper towels and keep warm in the oven until ready to serve.
* Serve with some bacon, baby spinach, poached egg, hollandaise and sweet chilli relish.

I used hash browns for the base of my chicken pot pie and it turned out great (you just need to heat them in the microwave so you can press them down and mould them into your pie dish). The slithered almonds in the pear salad were good too - toast them in a small pan and add some gf soy sauce and honey!

Gluten Free Kiwi Girl’s One Pan Creole Jambalaya
Serves 4
Ingredients
* 1 tbsp vegetable oil
* 200g chorizo, sliced
* 500g raw prawns (peeled, without tails)
* 2 tsp garlic, minced
* 1 tbsp butter
* 1/2 brown onion, sliced
* 1 cup celery, sliced
* 1/2 red capsicum, sliced
* 1 1/4 cups long grain rice
* 2 1/2 cups gf beef stock
* 2 tbsp tomato paste
* 200g (1 can) crushed tinned tomato
* 4 tsp sweet paprika
* 1 tsp thyme
* 1 tsp garlic powder
* 1 tsp onion powder
* 1/2 tsp cayenne powder (optional)
* 1/2 cup spring onion, sliced
* Salt & pepper, to taste
Instructions
* Heat oil in a large non-stick pan over medium high heat on the stovetop. (Note you need a lid for later)
* Add chorizo, cook for two minutes turning over halfway then remove and put into a bowl.
* Add butter, garlic, onion, celery and capsicum. Cook for 3 to 4 minutes until slightly softened.
* Add rice, stir to coat in oil.
* Add beef stock, tomato paste, tinned tomato, sweet paprika, thyme, garlic & onion powder and cayenne pepper (optional for heat). Add some salt and pepper. Return cooked chorizo to the pan. Stir well.
* Turn heat down to low, cover with a lid for 20 minutes. Stir once with a wooden spoon halfway through. Check seasoning of sauce, add more salt and pepper if required.
* Remove lid and check rice by eating a few grains. If the rice is just about done go to next step. If rice grains are still firm cover and cook for a few more minutes until rice is tender.
* Add prawns and spring onions and gently stir through the pan. Cook for a few minutes with the lid off until the prawns are cooked (turned orange in colour). �You should have a bit of char on the bottom of the rice at the end that adds some flavour and crunch!

Gluten Free Kiwi Girl’s Banana Cinnamon Rice Flake Slice
INGREDIENTS
* 3/4 cup milk
* 1 egg
* 1/2 cup soft brown sugar
* 50 butter, melted
* 2 small bananas, mashed
* 2 cups brown rice flakes
* 1/2 teaspoon baking powder
* 1/2 teaspoon ground cinnamon
* Pinch of salt
INSTRUCTIONS
* Preheat oven to 180°C. Line a small baking pan with baking paper.
* Place all ingredients in a large bowl. Mix until combined.
* Pour mixture into the baking pan.
* Place in oven and bake for 25 to 30 minutes, or until the top becomes golden brown.
* Remove from the oven and allow to cool for 5 minutes or so in the tin until transferring to cool on a wire rack. Store in an airtight container.
